Spinach and Feta Cheese Chicken Breasts

Spinach and Feta Stuffed Chicken Breasts Skinnytaste
- Ingredients:
- cooking spray or oil mister
- 1 tsp olive oil
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup chopped scallions
- 10 oz package frozen chopped spinach, thawed and juice squeezed out
- 1/4 cup chopped parsley
- 1 tbsp fresh dill
- 1/2 cup (2.5 oz) crumbled Feta cheese
- 1/3 cup fat free ricotta
- 1/4 tsp kosher salt and pepper, plus more to taste
- 8 thin skinless chicken breast cutlets (1.5 lbs total)
- 1 large egg
- 1 tbsp water
- 1/2 cup whole wheat seasoned breadcrumbs
Pina Colado Bars

Delicious no bake piña colada bars that are the perfect summer treat!
- 60 Vanilla Wafers, crushed
- 4 TBS butter, melted
- 16 oz (2 (8 oz) blocks) cream cheese, softened
- 1/2 cup cream of coconut
- 8 oz Cool Whip, thawed
- 8 oz can crushed pineapple in juice, with the juice drained
- 10 oz jar maraschino cherries, drained and diced
- 1 cup sweetened shredded coconut

Place butter and crackers in a slip lock bag and crush with rolling pin
- 1 sleeve Ritz crackers w/garlic
- 3/4-1 stick of whipped butter
- 1 teas. thyme
- garlic
- parsley
- salt
- 1/3 cup fine parmesan cheese
- fat free mayo
Slow Cooker Pork Tenderloin

Mix ingredients above. Pour over Tenderloin in the crock pot and cook on low for 6 hours
- 2 pound Pork Tenderloin
- 1/4 cup low sodium soy sauce
- 1 TBS Yellow Mustard
- 2-3 TBS maple syrup
- 2 TBS olive oil
- 2 TBS Diced dried onions
- 1 1/2 TSP Garlic Salt or Powder
German Potato Soup

In a soup pot, cook the bacon until lightly browned
- 1 bunch green onions, thinly sliced
- 1 cup all-purpose flour
- 8 cups of hot water
- 2 ounces Minors ham base...this is one tablespoon
- 3 tablespoons sugar
- 1 pound of potatoes (about 3 medium) peeled and diced
- 1/4 cup white vinegar (I use less)
- 1 cup half and half (I use Fat Free)
- Garnishes...bacon, green onions, cheese, hard boiled eggs
Zucchini Lasagna (No Pasta)

Great for anyone going low carb
- Ingredients: 4 Servings
- 2 1/2 cups zucchini, sliced lengthwise 1/4 inch thick (about 2 medium)
- 1/2 lb lean ground beef (or up to 1 lb)
- 1/4 cup onion, chopped
- 2 small tomatoes, cut up
- 1 (6 ounce) can tomato paste
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 cup water
- 1/8 teaspoon pepper
- 1 egg
- 3/4 cup low fat cottage cheese (or low fat or fat free ricotta)
- 1/2 cup mozzarella cheese, shredded (or up to 8 oz. divided)
- 1 teaspoon flour
- 1 . Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain fat. Add next 8 ingredients and bring to a boil.
- 2 . Reduce heat; simmer, uncovered 10 minutes or until reduced to 2 cups.
- 3 . In small bowl, slightly beat egg.
- 4 . Add cottage cheese, half of shredded cheese and flour.
- 5 . In 1 1/2-qt. baking-roasting pan arrange half of the meat mixture. Top with half of the zucchini and all the cottage cheese mixture. Top with remaining meat and zucchini.
- 6 . Bake uncovered at 375 degrees F for 30 minutes.
- 7 . Sprinkle with remaining cheese. Bake 10 minutes longer.
- 8 . Let stand 10 minutes before serving.
Asparagus with Wasabi Sauce

- 2 pounds of Asparagus
- 1 cup mayo
- 4 teaspoons Soy Sauce
- 2 Teaspoons of fresh Lemon Juice
- 1 1/2 teaspoons sugar
- 2 teaspoons of Wasabi Paste...or more to your taste
Strawberry Santa Cake

1. Rinse strawberries and cut around the top of the strawberry
- 1 lb large strawberries
- 1 (8 ounce) package cream cheese, softened
- 3-4 Tablespoons powdered sugar (or sugar substitute - to taste)
- 1 teaspoon vanilla extract
Salsa Chicken

Combine first 3 ingredients in medium bowl
- 1 1/2 cups Salsa
- 3 Tabl. brown sugar
- 1 tabl. mustard
- 4 bonless, skinless chicken breasts
