Broccolini Sauteed

Blanch the broccolini in a large pot of boiling salted water for 2 minutes
- 1 bunch broccolini
- Kosher salt
- 2 tablespoons unsalted butter
- 1/2 lemon, zested
- 1 teaspoon minced garlic
- 1 tablespoon lemon juice
- 1/4 teaspoon freshly ground black pepper

- 1 large head cauliflower (about 7 inches in diameter), broken or chopped up into roughly equal florets
- 1 medium onion (about 4 oz), chopped
- 5 cloves garlic - pressed, grated, or minced fine
- 4 cups chicken stock or broth, or 4 cups water with chicken base such as Better Than Bouillon
- 3 bay leaves
- 1 tsp dried thyme or 1 tablespoon fresh thyme
- pinch cayenne or other hot pepper
- 1/2 teaspoon paprika (optional, but adds a nice rosy color)
- salt and pepper to taste
- 1/2 cup heavy cream
- 1/2 lb cheddar cheese (white preferred)
- 1 tablespoon corn starch
- 1 tablespoon yellow or brown mustard
Fudge Sugar-Free EASY Chocolate Peanut Butter

I originally made this recipe with Hershey's baking chocolate because I figured most people could get it
- 8 oz. unsweetened chocolate squares (see update note)
- 1 cup smooth peanut butter (no sugar added)
- 1/2 cup Erythritol
- 1/2 cup worth Splenda (or to taste)
- 1/2 teaspoon vanilla
- Pinch salt

1) Put pecans in food processor
- 1 10 oz package chopped frozen spinach (or a larger bag, see above)
- 1/2 C toasted pecan pieces (lightly toast in oven or on stove)
- 6-8 oz sliced mushrooms
- 1/4 C minced onion
- 2 cloves garlic, minced, pressed, or smashed
- 1/2 C grated cheese - at least some of it should be a hard cheese like Parmesan
- 1 C ricotta cheese
- Dry white wine - a little to deglaze and 1-2 T more
- 1/2 t black pepper
- Salt to taste
- A little nutmeg

- 2 12 oz packages shirataki or tofu noodles
- 1 lb ground pork

- 2 Tablespoons sesame oil
- l lb bean sprouts
- 6 green onions or scallions, chopped

- 3 packages (1 and 1/2 lbs) cream cheese (room temperature)
- 4 eggs (preferably room temperature)
- 1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
