Chili Con Carne

In skillet cook meat, onion and green pepper till meat is lightly browned and vegetables are tender
- 1 lb ground beef
- 1 cup chopped onion
- 3/4 cup green pepper, chopped
- 1 - 1 lb can tomatoes, broken up
- 1 - 1 lb can red kidney beans, drained
- 1 - 8 oz can tomato sauce
- 1 tsp salt
- 1-2 tsp chili powder
- 1 bay leaf
Pork Tenderloin with Seasoned Rub

Preheat the oven to 450 degrees F
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried thyme
- Salt
- 1 1/4 pounds pork tenderloin
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
Knorr Spinach Dip

Combine all ingredients and chill about 2 hours
- 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1 container (16 oz.) sour cream
- 1 cup Mayonnaise
- 1 package Knorr Vegetable recipe mix
- 1 can (8 oz.) water chestnuts, drained and chopped (optional)
- 3 green onions, chopped (optional)
Bean and Bacon Soup

Soak beans overnight and discard water
- 2 cups navy beans -- soaked overnight
- 6 strips crispy fried bacon -- minced
- 3 medium carrots -- minced
- 3 medium celery stalks -- minced
- 1 medium onion -- minced
- 1/2 teaspoon thyme
- 2 cloves garlic -- minced
- 4 ounces tomato paste
- 1 dash red pepper flakes
- 6 cups water, more if needed
- 2 cups ham stock, if available -- decrease water
- 1 tablespoon wine vinegar
- few drops liquid Barbecue Smoke� -- optional
- salt and pepper -- to taste
Baked Chicken in Creamy Tomato Sauce

In an ovenproof skillet or Dutch oven (sorry photo does not show either), brown 3 to 4 large boneless chicken breas...
- 3 to 4 large boneless chicken breasts
- 1 Onion, finely chopped
- 2 cloves garlic, minced
- 15-ounce can chopped tomatoes
- 3-4 tablespoons Mascarpone
- Handful of roughly chopped basil
Banana Bread

Preheat oven to 350. Spray loaf pan with nonstick cooking spray
- 2 cups flour
- 1 cup sugar
- 1 T baking powder
- 1/2 tsp salt
- 1 cup (2-3 medium) mashed ripe bananas
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup chopped nuts, optional
Shrimp Cakes with Chili-Lime Cream Sauce

Coarsely chop shrimp in processor
- 16 uncooked large shrimp (about 1 pound), peeled, deveined
- 1 large egg
- 1 green onion, sliced
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon minced fresh cilantro
- 1/2 teaspoon hot pepper sauce
- 1/2 teaspoon salt
- Pinch of ground black pepper
- 2 cups panko (Japanese breadcrumbs)
- 2 tablespoons (or more) peanut oil (we used olive oil)
- Chili-Lime Cream Sauce
- 1/4 cup dry white wine
- 1/4 cup fresh lime juice
- 1 tablespoon chopped peeled fresh ginger
- 1 tablespoon minced shallot
- 1/3 cup whipping cream
- 2 tablespoons chili-garlic sauce*
- 6 tablespoons (3/4 stick) unsalted butter, room temperature, cut into 1/2-inch pieces
Grilled Cheddar Burgers

Preheat the grill to medium-high
- 1 pound ground beef
- 1/2 cup shredded cheddar cheese
- 2 tsp ground ancho chile pepper or mild chile pepper
- 1 tsp lemon zest
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 hamburger buns
- Favorite burger toppings (lettuce, tomatoes, pickles, onions, ketchup, etc.)
Chocolate Toffee Crunch Ice Cream

1. In canister container for an 4-quart ice cream freezer, combine sugar and cocoa powder
- 1 cup sugar
- 1/4 cup unsweetened cocoa powder
- 2 cups whipping cream
- 1 cup milk
- 1 tsp vanilla
- 1/8 tsp salt
- Cubed or crushed ice
- Rock Salt
- 3/4 cup chocolate covered toffee pieces
Parmesan Chicken Bake

Combine bread crumbs, cheese and seasonings in dish
- 1/4 cup plain bread crumbs
- 2 T grated Parmesan cheese
- 1 T parsley flakes
- 1 tsp salt (if you use Italian bread crumbs don't put salt in)
- 1/8 tsp lemon pepper
- 1/8 tsp thyme
- 3 chicken breasts, split, skinned
- 3 T melted margarine or butter
