Dates Squares - Ricardo's

With the rack in the middle position, preheat the oven to 180 °C (350 °F)
- Filling
- 2 1/2 cups (625 ml) Medjool dates, pitted and chopped (lightly packed)
- 1 cup (250 ml) water
- 2 tablespoons (30 ml) lemon juice
- 2 tablespoons (30 ml) brown sugar
- 1/2 teaspoon (2.5 ml) baking soda
- Crisp
- 1 3/4 cups (430 ml) quick-cooking rolled oats
- 1 cup (250 ml) unbleached all-purpose flour
- 3/4 cup (180 ml) brown sugar
- 1/4 teaspoon (1 ml) baking powder
- 3/4 cup (180 ml) semi salted butter, softened
Tourtière

Mix all ingredients together and cook for 25 minutes
- 1 small onion
- 11/2 lb ground pork - or pork and beef

Pie, Old Fashioned Pumpkin

From Simple Recipes
- 2 cups of pumpkin pulp purée from a sugar pumpkin* or from canned pumpkin purée
- 1 1/2 cup heavy cream or 1 12 oz. can of evaporated milk
- 1/2 cup packed dark brown sugar
- 1/3 cup white sugar
- 1/2 teaspoon salt
- 2 eggs plus the yolk of a third egg
- 2 teaspoons of cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamon
- 1/2 teaspoon of lemon zest
- 1 good crust (see pâte brisée recipe)
Pork Chops - Spanish Style

Trim fat from pork chops and melt in a frying pan with 1 tbsp sugar
- 6 pork chops
- 1 tbsp sugar
- flour
- lemon juice
- 1/2 tsp dry mustard
- 1/4 tsp curry powder
- 1/4 tsp paprika
- 1 tsp salt and pepper
- 2 tbsp finely chopped onion
- 3/4 cup chilli sauce
- 1 tsp Worcestershire sauce
- 1 cup boiling water
Muffins - Healthy Chocolate Chips

Preheat oven to 350. Line a muffin tin with muffin liners and spray with cooking spray
- 1 cup oats (I use old-fashioned oats)
- 1 cup milk (skim, soy, whatever you have)
- 1 cup whole wheat flour (I use white whole wheat flour)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup brown sugar
- 1 egg
- 1/4 cup butter, softened (or sub 1/4 cup oil or 1/4 cup applesauce)
- 2 teaspoons vanilla extract
- 1 cup semisweet chocolate chips

Asian Turkey Lettuce Wraps

Heat olive oil in a saucepan over medium high heat
- Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- Kosher salt and freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 small onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1/2 teaspoon freshly grated ginger
- 1 cup cooked rice
- 3 green onions, thinly sliced
- 1 head butter lettuce
Mom's Pork Filet with Creamy Mustard Sauce

- 3/4 cup evaporated milk
- 2 tbsp Dijon mustard

- 1/2 cup butter or margarine
- 1/2 cup flour
- salt & pepper
- 3 cups chicken stock
- 1 1/2 cup carrots
- 1 can peas, drained
- 3 cups diced chicken or turkey

- 16 fresh sage leaves
- 2 red onions, peeled and chopped
- 2 sticks celery, trimmed and chopped
- 2 carrots, peeled and chopped
- 4 cloves garlic, peeled and chopped
- 2 sprigs fresh rosemary , leaves picked
- 1/2 - 1 fresh red chilli, to taste, deseeded and finely chopped
- sea salt
- freshly ground black pepper
- 2 kg butternut squash, onion squash, halved, deseeded and cut into chunks
- 2 litres organic chicken or vegetable stock
- extra virgin olive oil
- For the croutons

- 16 slices ciabatta bread
- 1 block Parmesan cheese, for grating
