Potato Leek Soup

Melt the butter over medium heat in a large soup pot
- 3 tablespoons unsalted butter
- 4 leeks, white and light green parts only, roughly chopped
- 3 cloves garlic, peeled and smashed
- 2 pounds Yukon Gold potatoes, peeled and roughly chopped into 1/2-inch pieces
- 7 cups low sodium chicken or vegetable broth (best quality such as Swanson)
- 2 bay leaves
- 1 sprig fresh thyme, plus more for garnish if desired
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup heavy cream
- Chives, finely chopped (optional)
Quick waffles

Beat eggs until thick; add milk and oil Add all dry ingredients and mix until smooth
- 2 eggs
- 3/4 cup milk
- 2 tbsp vegetable oil
- 1 cup flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp sugar
- 1/2 tsp salt
Frittata Sandwiches

In bowl, whisk eggs, basil, pepper and salt
- 8 eggs
- 1 tsp dried basil
- 1/4 tsp pepper
- salt to taste
- 2 tbsp margarine
- 1 cup red onion
- 1 minced clove garlic
- 1 cup packed baby spinach
- 1 small chopped tomato
- 1/4 cup pitted, halved black olives
- 3/4 cup crumbled feta cheese
- 12 slices flax or other grain bread
Scones, Vanilla (Starbucks-like)

Preheat oven to 425 degrees
- For the scones:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 6 tablespoons cold unsalted butter, diced
- 1 small box (3.4 ounces) instant vanilla pudding mix, optional
- 1 vanilla bean, scraped (or 1 tablespoon vanilla bean paste or extract)
- 1 large egg
- 1/2 cup plus 1 tablespoon heavy cream
- For the frosting
- 2 tablespoons butter, softened
- 1 cup powdered sugar
- 1 tablespoon vanilla bean paste or extract
- 2-3 tablespoons cream
Chicken with Basil and Parmesan

Flatten breasts, dip in flour, salt and pepper
- 4 boneless skinless chicken breast halves
- 1 ⁄4 cup flour
- salt and pepper
- 4 tablespoons butter
- 1 ⁄4 cup minced fresh basil
- 1 tablespoon red wine vinegar
- 1 ⁄2 cup parmesan cheese
- 1 teaspoon sugar
- 1 cup cream or 1 cup milk
Chicken/Pork Teriaki Marinade

Mix all ingredients and marinade meat for up to 4 hours
- 1/2 cup soya sauce
- 1/2 cup water
- 1/3 cup white sauce
- 1/8 cup Worcestershire sauce
- 1 1/2 tbsp white vinegar
- 1 1/2 tbsp vegetable oil
- 1/4 cup dried onion flakes
- 1 tsp garlic powder
- 1/2 tsp fresh ginger, grated
Minestrone

Scramble-fry bacon, onion, ground beef to brown
- 4 slices bacon, chopped
- 1 1/2 cup chopped onion
- 1 1/2 lb lean ground beef
- 10 1/2 oz beef bouillon cubes (10x6 g)
- 10 cups boiling water
- 14 oz canned tomtatoes, broken up
- 1 cup chopped celery
- 1 cup diced carrot
- 1 1/2 diced potato
- 1 cup chopped cabbage
- 1 tsp salt
- 1/4 tsp each pepper and garlic powder
- 1/2 tsp each basil and oregano
- 8 oz fusilli
- 14 oz kidney beans or garbanzo, drained
