1. Put a skillet on medium heat and drizzle with olive oil
- Extra Virgin Olive Oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 pound lean ground beef
- 1 medium jar ketchup (about 2.5 cups)
- 1 teaspoon chili powder
- 2 tablespoons prepared yellow mustard
- Kosher salt and freshly ground pepper
- 4 all-beef hot dogs
- 4 hot dog rolls
- 1/2 cup grated Cheddar cheese
Cheesy Scrambled Egg Casserole

- 3 tbsp. margarine or butter
- 1/4 c. chopped onions

- 1/2 c. ricotta cheese
- 1 tsp. Italian seaoning
- 1/4 tsp. salt

- 1/2 c. diced pepperoni
- 1/4 c. grated parmesan
- 1/4 c. fresh mushrooms

Four Cheese Baked Macaroni

1. Heat oven to 350 degrees
- 1 lb rotelli pasta
- 2 c shredded sharp cheddar
- 1 c shredded mozzerella
- 1/2 c shredded Jarlsburg
- 1/2 c grated Parmesan
- 1/4 c unsalted butter
- 1/4 c all purpose flour
- 4 c milk
- 1 tsp salt
- 1/8 tsp cayenne
- 2 large ripe tomatoes, cored and thinly sliced
Spinach, Strawberry and Hearts of Palm Salad

For the dressing: Combine vinegar, sugar, lemon juice and salt in a small non-reactive saucepan
- Dressing:
- 1/3 c. cider vinegar
- 3/4 c. sugar
- 2 tbsp. lemon juice
- 1 tsp salt
- 1 c. vegetable oil
- 1/2 small red onion, grated
- 1 tsp dry mustard
- 1/2 tsp paprika
- 1-1/2 tbsp poppy seeds
- Salad:
- 1 lb. fresh spinach leaves, washed and torn into small pieces
- 1 can hearts of palm, drained and sliced
- 2 c. strawberries, stemmed and sliced

1. Place ham in slow cooker (5-6 quarts)
- 1 3.5 pound boneless ham portion
- 4 medium sweet potatoes, peeled and halved lengthwise
- 1 large onion, cut into thin wedges
- 1/2 c. packed brown suger
- 1/4 c. honey
- 1/4 c. pineapple juice
- 2 T. butter, melted
- 1 t. crushed red pepper
Slow-Simmered Pork Sandwiches with Jalapenos

1. Trim fat from pork. Grind toasted cumin seeds with mortar
- 1 4 lb. boneless pork shoulder roast
- 5 t. cumin seeds, toasted (place in dry skillet over medium heat. Cook 2-3 minutes, shaking skillet occassionally. Remove from heat and crush after cooled)
- 2 T. brown sugar
- 2 t. kosher salt
- 3/4 t. black pepper
- 1/2 t. crushed red pepper
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 1 12 oz can cola
- 1 c. chicken broth
- 1/4 c. cooking oil
- 1 lb. plum tomatoes, cored, seeded and chopped
- 1 12-16 oz. jar pickled jalapenoes
- 2/3 c. coarsely chopped cilantro
- 12 rolls
- 2 limes, cut into wedges

1. Heat oil in large non-stick skillet over medium high heat
- 1 tbsp olive oil
- 1/2 c chopped onion
- 1 tsp minced garlic
- 1/2 tsp dried thyme
- 8 8 oz sliced fresh mushrooms
- 1 lb. boneless skinless chicken breast, cut into bite size pieces
- 1/2 c dry white wine
- 1/2 tsp salt
- 1/4 tsp fresh ground pepper
- 1 c uncooked instant rice
- 1 c chicken broth
- 1/2 c freshly grated parmesan cheese
- 1/4 c chopped fresh parsley
Penne with Artichoke Sauce

- 1 lb. wheat penne
- 2 T. olive oil
- 1/2 c. chopped red onion
- 1/2 c. chopped basil
- 28 oz. artichoke hearts, drained and quartered
- 1 c. chopped brocolli florets
- 1 c white wine
- 1/2 c half and half
- 1 t. salt
- 1 t. pepper
