FROSTING - Cream Cheese Frosting

Add all ingredients to a bowl and mix until smooth
- 1 stick regular (salted) butter
- 1 8-ounce package cream cheese
- 1 pound sifted powdered sugar
- 1 teaspoon vanilla extract
- Dash of salt to taste (to avoid over-sweetness)
KUIH - Steam Yam Cake

1. Heat 1 bowl of oil in pan
- Garnishing :
- 1 small yam, peeled the skin and cut into small cubes
- 1/2 bowl dried prawns, soak in water and chopped
- Some chopped garlic and onion
- 2 bowls rice flour
- 4 bowls water
- 1/4 tsp five spice powder
- 1/4 tsp pepper
- 1 tsp salt
- Fried shallots
- Fried crispy dried prawns
- Spring onion, chopped
- Red chilli, cut into thin strips
CHICKEN - Steamed Herbal Chicken

1) Clean the chicken legs and pat dry
- Ingredients:
- This is a modified version of steamed herbal chicken adapted from Quick & Easy Hawkers’ Fair. I had omitted dang guai (chinese herb – 当归) and chinese shaoxing cooking wine.
- 2 chicken whole legs
- 1 tbsp wolfberries (枸杞) (washed) – Add more if you like as it is a very nutritious (read this link for more details)
- 5 red dates (removed seeds)
- Seasonings:
- 1 tbsp oyster sauce
- 1/2 tsp salt
- 1 tsp sesame oil
- 1/2 tbsp cornflour (diluted with 2 tbsp water)

- Canola oil for frying
- 1 tablespoon smoked paprika
- 1 tablespoon onion powder
- 1/2 tablespoon brown sugar
- 1/2 tablespoon garlic salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large sweet potatoes, ends chopped off
POTATO - Seasoned (leftover) Fries 辣蒜粉调味薯条

Toss them to mix well before baking it at 180C for around 10 minutes, depending on the leftover fries

SNACKS - Homemade Seaweed Meat Floss (海苔肉松)

Cut the meat in big chunks
- Braising:
- 500 grams of pork sirloin (猪腿肉)
- 2 slices of ginger
- 2 sprigs of spring onion – cut into big pieces
- 2 tablespoons of castor sugar or rock sugar of the size
- 2 tablespoons of Chinese cooking wine
- 2 tablespoons of fish sauce (optional substitute with 1 teaspoon of salt)
- 1 tablespoon of light soya sauce
- 1 teaspoon of five spice powder
- Stir frying:
- 2 tablespoons of sesame seeds
- 3-4 pieces of seaweed cut into small pieces (optional)
- Additional seasoning to taste (sugar or other meat stock)
CHICKEN - Sweet Chili Chicken

To make the glaze, preheat the grill to high
- 3-4 tbsp chilli sauce , depending on how hot you like it (we used Amoy)
- 2 tbsp clear honey
- 2 tbsp olive oil
- 4 boneless chicken breast fillets , skin on
- 2 garlic cloves , crushed
- 1 lime , cut into 4 wedges, to serve, optional
APPERTISER - Caesar Salad Deviled Eggs

Place the eggs in a saucepan and cover with water
- 6 large eggs
- 12 small romaine lettuce leaves
- 2 to 3 tablespoons mayo (2 is suggested but 3 will make a creamier filling)
- 2 teaspoons smooth Dijon mustard
- 1/4 teaspoon Worcestershire sauce (optional)
- 1/2 teaspoon lemon juice
- 2 tablespoons chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 1 anchovy fillet, minced
- 1 small clove garlic, minced
- 1/4 teaspoon grated lemon zest
- 1/4 cups (30 grams) panko bread crumbs
- 2 tablespoons freshly grated Parmesan cheese or more to taste

- 4 cloves garlic, crushed
- 1/2 teaspoon salt
- 1 teaspoon crushed black peppercorns*
- 1 teaspoon fresh lemon juice
- 2 Tbsp brandy
- 1 lb. raw medium-sized shrimp, shelled, de-veined and split (tails on or off)**
- 1-2 Tbsp olive oil
- 2 Tbsp fresh chopped parsley
- Crushing the peppercorns in a small ziplock bag and place that bag inside another ziplock bag and smash with a hammer.
