Fresh Lotus Root Salad

1. Rinse lotus roots with cold water
- 1 lb Fresh lotus root
- 1/2 tsp Grated fresh ginger
- 4 tsp Sugar
- 1 1/2 tbsp Soy sauce
- 2 tbsp White vinegar
- 1/2 tbsp Asian sesame oil
- 1 tbsp Chopped fresh cilantro
- Toasted black or white sesame seeds for garnish.
Hunan Style Hot and Spicy Chicken

1. In a large bowl, mix ginger slices, sherry vinegar and 2 tbsp soy sauce
- 4 tablespoons vegetable oil
- 1 green onion, sliced thinly on the diagonal
- 3 small hot chili peppers, sliced thinly on the diagonal
- 1 tablespoon ginger, shredded
- 1 tablespoon sherry wine vinegar
- 2 tablespoons soy sauce (light is the best)
- 2 lbs chicken pieces, cut into bite size pieces
- 1/2 cup chicken broth
- 1 tablespoon soy sauce (light is the best)
- 2 tablespoons shaoxing wine or 2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 teaspoons szechwan pepper
- 1 tablespoon cornstarch
Grilled Sweet Potato with Scallions

1. Heat grill to medium. 2
- 3 sweet potatoes
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- Salt and black pepper
- 2 tablespoons butter
- 2 scallions, thinly sliced
Sichuan Green Beans

1. Make sure the green beans are dry, with no water clinging to them
- 1 lb fresh green beans, ends trimmed and cut into 3-inch lengths
- Oil, for deep-frying
- 1/2 tablespoon Sichuan peppercorns
- 3 cloves garlic, minced
- 1 teaspoon minced fresh ginger
- 6 to 10 dried red chiles, seeded and chopped
- 3 green onions, white parts only, chopped
- 4 ounces ground pork*
- 2 tablespoons light soy sauce
- 1 teaspoon chicken powder (optimal)
- Salt
- Can also use thinly sliced pork pieces if desired
Cranberry Jell-O Mold

1. dissolve jell-o inboiling water 2
- 1 package lemon jell-o
- 1 package raspberry jell-o
- 2 1/2 C boiling water
- 1 can jellied cranberry sauce
- 1 can crushed pineapple (small)
Best Beef Brisket

- 6 – 7 lb beef brisket
- 1/3 C lemon juice
- 1 tsp salt
- 1/3 C brown sugar
- 1 tbsp Dijon mustard
- 3 tbsp Worcestershire sauce
- 1/2 C ketchup
Lemon Jell-O Mold

1. mix everything together but cool whip and chill for ½ an hour 2
- 2 3oz packages lemon jell-o
- 6 oz frozen lemonage (thawed)
- 8 oz cool whip (thawed)
- 2 1/2 C hot water
Pumpkin Cheesecake

1. Pre heat oven to 350. 2
- 2 8in pastry shells
- 2 packages 8oz cream cheese
- 3/4 C sugar
- 15oz can pumpkin puree
- 1 1/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 2 eggs
- 1/4 tsp salt
White Russian Pudding Shots

- 1 small package Jell-O chocolate pudding
- 3/4 cup milk
- 1/4 cup vodka
- 1/2 cup Bailey's
- 8 ounces extra creamy cool whip
Coconut Rice

- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 2 cups jasmine rice, washed and drained well
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 1 (3-inch) cinnamon stick
- 2 limes, juice from 1 lime and grated zest of the other lime
- 1/4 cup sweetened coconut flakes
