Spicy baked salmon and apples

A delicious and unique way to prepare salmon in the oven
- 1 granny smith apple
- 4 skinless salmon fillets (about 4 ounces each)
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon each salt and pepper
Apple Crisp

1. Peel, core and slice the apples thin 2
- 5-6 large Granny Smith apples
- 1/4 C sugar
- juice of 1/2 lemon
- 2/3 C flour
- 1/2 tsp ginger
- 1 C firmly packed brown sugar
- 1/8 tsp mace (or nutmeg)
- 1/4 tsp salt
- 1/2 C butter (at room temperature)
Cucumber Dill Salad

1. Slice cucumber lengthwise, remove seeds and slice thinly
- 2 English cucumbers
- 1 small red onion
- 1.5 tablespoons salt
- 1 Tbsp. white wine vinegar
- 1 teaspoon sugar
- 2 tsp. dried dill or 2 Tbsp. fresh
Chickpea, Couscous and Feta Salad

Salad: 1. Cook green beans in a large pot of boiling water until crisp-tender, about 3 minutes
- Salad:
- 8 oz green beans, halved crosswise
- kosher salt
- 1 C pearled couscous
- 1 tsp evoo
- 1/4 C raw sunflower seeds*
- 1 15.5 oz can chick peas, rinsed
- 4 oz crumbled feta
- 2 tbsp chopped fresh dill
- 2 tbsp fresh lemon juice
- Vinaigrette:
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp thyme
- 1/4 C evoo
- 2 tbsp. white wine vinegar
- 1 tsp Dijon mustard
- ground pepper
Grilled Snapper with Spicy Salsa

1. saute´ above ingredients in butter until peppers are tender 2
- 2 lb snapper
- cajun seasoning
- spicy salsa
- red, green & yellow peppers (diced)
- real hot peppers (diced)
- 2 cups tomatoes (diced & seeded)
- lime juice
- onion (diced)
- butter
- salt & pepper (to taste)
- hot sauce (few dashes)
Asian Ginger Carrot Dressing

1. Place all the ingredient in the blender and process until smooth
- 1/4 cup shredded carrots
- 1/4 cup minced onion
- 1 tbsp minced fresh ginger
- 1 small clove garlic
- 1 tbsp minced celery
- 3 tbsp peanut oil (or sesame oil)
- 3 tbsp rice vinegar
- 2 tbsp water
- 1 tbsp tomato paste
- 2 tsp low sodium soy sauce (use tamari for gluten-free)
- 1 1/2 tsp raw sugar
- 1 tsp lemon juice
- salt and fresh ground black pepper
- Next time try a little bit more carrot and ginger and a little less onion.
Artichoke – Spinach Dip

1. Mix all ingredients into a baking dish 2
- 4 cloves of fresh garlic (or 4 tbsp jarred minced garlic)
- 14 oz can artichoke hearts (drained and chopped)
- 10 oz frozen/chopped spinach (thawed and drained)
- 10 oz container Alfredo pasta sauce
- 1 C shredded mozzarella cheese
- 1/3 C parmesan cheese
- 4 oz softened cream cheese
Hawaiian Chicken Stir-fry

1. cut chicken breasts into approximately 1 inch pieces 2
- 2 boneless, skinlesschicken breasts
- 1 onion, sliced
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into chunks
- 1 orange pepper, cut into chunks
- 1 can chunked pineapple
- Lawry’s or Kroger brand Hawaiian marinade
Warm Sweet Potato Salad with Chipotle-Peanut Dressing

1. Preheat the oven to 400°F (200°C)
- 2 lb sweet potatoes, well scrubbed
- 1 tbsp Canola Oil
- 1 ⁄2 tsp each salt and pepper
- 1 ⁄3 cup Peanut Butter
- 2 tbsp lime juice
- 1 tbsp light mayonnaise
- 1 tsp chipotle-flavoured hot sauce
- 1 tsp granulated sugar
- 1 tsp minced gingerroot
- 1 ⁄2 tsp minced garlic
- 1 small sweet red pepper, quartered and sliced
- 1 ⁄2 cup each bean sprouts and sliced green onions
- 2 tbsp finely chopped Peanuts
Beef Tenderloin (BBQ)

1. Coat beef tenderloin with evoo
- Whole piece beef tenderloin
- Evoo
- Pepper
- Ground garlic
