Banana Bread

1. sift flour, bakingpowder, baking soda, salt and sugar together 2
- 1 3/4 C flour
- 2/3 C sugar
- 2 eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/4 C margarine
- 1 C mashed ripe bananas (2 – 3, black and mushy)
Caramel Chocolate Brownies

1. heat oven to 350° 2. combine cake mix, butter, 1/3 C evaporated milk and mix well 3
- 18 1/2 oz devil’s food cake mix
- 3/4 C melted butter
- 2/3 C evaporated milk
- 50 individually wrapped caramel squares
- 8 oz semi-sweet chocolate chips
Pad Thai Noodles

1. Warm a pot of water on the stove until just before boiling
- Sauce:
- 8-10 oz. thin Thai-style rice noodles (or enough for 2-3 people)
- 1 to 1 1/2 cups raw chicken breast or thigh meat, sliced
- 4 cloves garlic, minced
- 2 tsp. cornstarch
- 2 Tbsp. soy sauce
- 3 cups fresh bean sprouts
- optional: 2 eggs
- 3 spring (green) onions, sliced
- approx. 1 cup fresh coriander
- 1/3 cup crushed or roughly chopped peanuts (or other nuts, such as cashews)
- 1/2 cup chicken stock
- 1/4 tsp. freshly ground black pepper
- 3/4 Tbsp. tamarind paste (available at Asian/Indian food stores)
- 2 Tbsp. fish sauce
- 1-3 tsp. chili sauce (depending how spicy you want it)
- 2 - 3 Tbsp. brown sugar (more or less to taste)
Strawberry Salad with Candied Pecans and Goat Cheese

For the pecans: Melt butter over medium heat
- FOR THE SALAD:
- 4 cups Field Greens
- 1-1/2 cup Fresh Strawberries, Sliced
- 2 ounces, weight Goat Cheese Crumbled
- 1/2 cups Candied Pecans (Recipe Follows)

- FOR THE CANDIED PECANS:
- 3 teaspoons Butter
- 3 Tablespoons White Sugar
- 1 cups Pecans
- 1/4 teaspoons Vanilla

- FOR THE VINAIGRETTE:
- 1/4 cups Strawberry Jam
- 1 Tablespoon Water
- 1 Tablespoon Extra Virgin Olive Oil
- 4 Tablespoons Balsamic Vinegar
- Salt And Pepper, to taste
Pan Roasted Salmon with Herb Crust

- 1 lb salmon filets
- 1 tsbp Creole mustard (or any spicy style mustard)
- 1 tsp chopped fresh basil
- 1 stp chopped fresh dill
- 1 tsp chopped fresh oregano
- 1 tsp chopped fresh green onions
- 2 tbsp olive oil
Lighter Chicken Enchiladas

1. Saute garlic until fragrant
- Coarse salt and ground pepper
- 3 boneless, skinless chicken breast halves (6 to 8 ounces each)
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 1 teaspoon ground cumin
- 2 tablespoons minced canned chipotles in adobo
- 1 14 oz can reduced-sodium chicken broth
- 1 14 oz can green enchilada sauce
- 8 flour tortillas (6-inch)
- 1/2 cup grated Monterey Jack cheese (2 ounces)
Cayenne Rubbed Chicken with Avocado Salad

1. In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken
- Coarse salt and ground pepper
- 1/4 teaspoon cayenne pepper
- 4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
- 2 tablespoons olive oil
- 1 medium red onion, finely diced
- 2 tablespoons fresh lime juice
- 1 Hass avocado, pitted and cut into chunks
Pumpkin Cupcakes with Pumpkin Spice Cream Cheese Frosting

- For the Pumpkin Cream Cheese Frosting:
- 18.25 oz Betty Crocker Golden Vanilla Super Moist Cake Mix
- 2 tsp pumpkin pie spice
- 1 cup canned 100% pure pumpkin
- 1 cup water
- 8 oz Philadelphia 1/3 fat cream cheese
- 1/2 cup pureed pumpkin (canned is fine)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 5 tbsp packed brown sugar
Spinach Pinwheel Lasagna

1. Adjust oven rack to upper-middle position and heat oven to 400 degrees
- 6 ripple-style oven-ready lasagna noodles
- 6 garlic cloves, minced, divided
- 3 Tbs. olive oil, divided
- 1 cans (28 ounces each) crushed tomatoes
- 2 tsps. dried basil leaves
- Salt and ground black pepper
- 8 oz fresh spinach, chopped
- 1 cups part-skim ricotta
- 1/2 cup grated Parmesan
- 1/2 cup shredded fontinella (or fontina) cheese
