  • 2 Tbs olive oil
  • 2 carrots, cut into 1/4 inch dice
  • 2 celery stalks, cut into 1/4 inch dice
  • 1 onion, cut into 1/4 inch dice
  • 1 can (4 oz) mushrooms, save liquid and add water to equal 1/3 cup
  • 3 cloves garlic, minced
  • 1 1/2 cups fresh bread crumbs
  • 2 # ground beef
  • 2 eggs, lightly beaten
  • 1/4 cup minced fresh parsley
  • 1/2 tsp minced fresh thyme
  • Salt and pepper to taste
  • 1/3 cup ketchup
