Classic Meatloaf

Adapted from William-Sonoma's recipes
- 2 Tbs olive oil
- 2 carrots, cut into 1/4 inch dice
- 2 celery stalks, cut into 1/4 inch dice
- 1 onion, cut into 1/4 inch dice
- 1 can (4 oz) mushrooms, save liquid and add water to equal 1/3 cup
- 3 cloves garlic, minced
- 1 1/2 cups fresh bread crumbs
- 2 # ground beef
- 2 eggs, lightly beaten
- 1/4 cup minced fresh parsley
- 1/2 tsp minced fresh thyme
- Salt and pepper to taste
- 1/3 cup ketchup
No Fry Chicken Parmesan

Preheat oven to 400. Dip chicken in egg, then bread crumbs
- 4 bonless, skinless chicken breast halves
- 1 egg, beaten
- 3/4 cup Italian dry bread crumbs
- 1 jar (1 lb. 10 oz) Ragu Old World Style Pasta Sauce
- 1 cup shredded mozzarella cheese (about 4 cups)

Boil water, vanilla bean and sugar for 5-6 minutes
- 3 1/2 cups sugar
- 1 quart vodka (4 cups)
- 1 vanilla bean or 2 Tbs vanilla extract
- 4 cups water
- 3/4 cup instant coffee

- 1 cup mozzarella cheese, divided
- 1/4 cup grated parmesan chees
- 1 tsp Italian seasoning
- 20 jumbo shells, cooked, drained
- 1-26 oz jar spaghetti sauce
- 1 large tomato, chopped
Super Sandwich

In a bowl, combine cucumber, tomato, onion, olives and salad dressilng; set aside
- 1 medium cucumber, peeled, seeded and chopped
- 1 medium tomato, seeded and chopped
- 1 small onion, chopped
- 1/2 cup pitted ripe olives, chopped
- 1/2 cup stuffed green olives, chopped
- 1/4 cup Italian salad dressing
- 1 unsliced round loaf (1 1/2 pounds) sourdough, white or whole wheat bread
- 1/2 pound sliced fully cooked ham
- 1/4 pound sliced salalmi
- 1/4 pound sliced cooked pork
- 1/2 pound sliced swiss cheese
- 1/2 pound sliced muenster cheese
Peach Chutney Dip

Pecan Encrusted Salmon

Preheat oven to 450 degrees' Stir together butter, honey, mustard in a small bowl and set aside
- 1/4 cup butter, melted
- 3 Tbs Dijon-style mustard
- 1 1/2 Tbs honey
- 1/4 cup Italian bread crumbs
- 1/2 cup very finely chopped pecans
- 4 tsp minced flat-leaf parsley
- 4-6 oz salmon fillet pieces
Cranberry-Pistachio Bark
