Sweet and Spicy Coleslaw

- 1 medium yellow onion
- 1/2 cup mayonnaise
- 1/4 cup mustard
- 2 teaspoons apple cider vinegar
- 1 cup sugar
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne
- Salt and freshly ground black pepper
Refrigerator Cucumber Slices Recipe

My family can never get enough of these sweet cucumber slices in the summer
- 4 * 4 pounds cucumbers (about 6 large), cut into 1/4-inch slices
- 3 * 3 medium onions, cut into 1/8-inch slices
- 3 * 3 cups sugar
- 3 * 3 cups cider vinegar
- 4 * 4 teaspoons canning/pickling salt
- 1-1/2 * 1-1/2 teaspoons mustard seed
BETH'S VANILLA CORNBREAD

Preheat oven to 375°. Grease an 8-inch square baking pan or mist with baker's spray or oil
- 1 cup fine1y ground yellow cornmeal
- 1 cup all purpose flour
- 3/4 cup powdered sugar
- 1/2 tsp. salt
- 1/2 tsp. Baking powder
- 1 tsp. Baking soda
- 2 eggs
- 1 1/2 cups cultured buttermilk
- 1 tbs. pure vanilla
- 5 tbs. melted unsalted butter
Chive and Garlic Mashed Potatoes

- 4 to 6 pounds Yukon gold potatoes, peeled
- Kosher salt and freshly ground black pepper
- 1 cup heavy cream
- 1/2 stick (1/4 cup) unsalted butter
- 4 cloves garlic, lightly crushed
- 3 sprigs fresh thyme
- 2 tablespoons chopped chives
Ranch Style Cole Slaw

This makes about 7 servings of 1 cup each
- 1/3 cup mayonnaise
- 2/3 cup sour cream
- 2 Tablespoons lemon juice
- Artificial sweetener to equal 2 T sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/8 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon plus one pinch salt
- 1 lb cabbage, shredded
DILL DIP OR SPINACH DIP

Mix all together. Must sit overnight for all flavors to blend
- I pkg.frozen chopped spinach, thawed & squeezed as dry as possible
- 1 1/2 1 1/2 tsp. dill - (most important)
- Juice of 1/2 lemon
- 1/2 cup finely chopped green onion
- 1/2 cup finely chopped parsley (:fresh as possible)
- 3/4 cup mayonnaise (not salad dressing)
- 1 cup sour cream
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
Coconut Crack Bars

These no-bake bars are completely addictive
- 1 cup unsweetened shredded coconut (80g)
- 1/4 cup agave or pure maple syrup (or 1/4 cup water and 2-3 nunaturals stevia packs)
- 2 tbsp virgin coconut oil (For all substitutions in this recipe, see nutrition link below)
- 1/2 tsp pure vanilla extract
- 1/8 tsp salt

- Yield: Makes 6-8 Bars
FRUIT COBBLER

Wash and drain berries. If using strawberries, remove the hulls
- 2 cups fresh berries
- 1 cup sugar, plus extra to sweeten fruit 1 cup flour
- 1 tsp. Baking powder
- 1 egg, lightly beaten
- 1/2 cup butter, melted
RUB N BRUSH B-B-O DEVILED BEEF

Brush 4 - 6-8 oz. steaks with some of the deviled glaze during cooking
- Mix On Plate:
- 2 tsp. English mustard powder
- a little paprika
- 1/2 tsp. salt
- 1 tbsp. light brown sugar
- 1/4 tsp. ground allspice
- 1/2 tsp. black pepper
- Mix all together. Dredge steaks in mixture & rub it into the steaks.
- Mix:
- I tbsp. English mustard
- 2 tbsp. Ketchup
- 1 tsp. oil
- 2 tbsp. Worcestershire sauce
- 3/4 cup light brown sugar
- 2 tbsp. White wine vinegar
- 1/2 tsp. Tabasco sauce
- I tsp. paprika
Crispy Baked Potatoes
