Pink Lemonade Pie

Mix all together and pour into pie crust
- 1 Graham cracker crust ( or almond brown sugar crust recipe)
- 1 cup sweetened condensed milk
- 8 oz. Cool whip
- 1/2 pint frozen strawberries
- 1 small can frozen pink lemonade
Tomato Soup with Cannelini

In large soup pot, melt butter over med
- 2 T. butter
- 1 onion, chopped
- 2 carrots, sliced (or half bag of baby carrots)
- 2 cloves garlic, minced
- 1 15 oz. can cannelini
- 1 28 oz. can crushed tomatoes
- 1 T. sugar
- 3 cups chicken broth
- 1 bay leaf
- 1 t. basil
- 1/2 t. red pepper flakes
- 3/4 t. salt
- 1/2 t. ground pepper
Apple Pie, Easy Skillet

1. Preheat oven to 350º. Peel apples, and cut into 1/2-inch-thick wedges
- 2 pounds Granny Smith apples
- 2 pounds Braeburn apples
- 1 teaspoon ground cinnamon
- 3/4 cup granulated sugar
- 1/2 cup butter
- 1 cup firmly packed light brown sugar
- 1 (14.1-oz.) package refrigerated piecrusts
- 1 egg white
- 2 tablespoons granulated sugar
Broccoli Cheese Casserole

Preheat oven to 350°. In large bowl, beat eggs, add both cheeses, flour, salt and pepper
- 1 cup cottage cheese
- 1 cup (4 oz) shredded cheddar cheese
- 3 T flour (6 T = 2/3 cup, 9 = 1 cup)
- 1 teas. salt
- dash pepper
- 2 10 pkgs frozen chopped broccoli, thawed
- 3 eggs, beaten
Basil Boats

Place basil leaves on a serving plate
- 8 large fresh basil leaves
- 1/2 cup finely chopped tomato
- 1/2 cup finely chopped carrot
- 3 tablespoons shredded part-skim mozzarella cheese
- 4 teaspoons shredded Parmesan cheese
- 3 tablespoons Italian salad dressing
Warm Lemon Pepper Chicken Salad

•Place peas and ¼ cup water into Pampered Chef large micro-cooker*
- •8 oz sugar snap peas
- •1 ½ lbs “b” size red potatoes
- •2 tsp salt
- •4 boneless, skinless chicken breasts
- •2 tbsp lemon pepper rub, divided
- •1 lemon
- •1 garlic clove, pressed
- •¼ cup olive oil
- •1 medium red bell pepper
- •½ small red onion
- •1 jar (6 oz) marinated artichoke heart quarters, drained (I like to use 2 jars since my kids love artichokes!)
- •½ cup chopped fresh parsley (optional)
Chili, Black Bean Salsa

1. Combine 1 1/2 cups beans, 2/3 cup water, and sugar in a food processor; process until smooth
- 2 (15-ounce) cans black beans, rinsed, drained, and divided
- 2/3 cup water
- 1 tablespoon dark brown sugar
- Cooking spray
- 1/2 pound ground turkey
- 1 cup chopped sweet onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 3 sweet hickory-smoked bacon slices, chopped
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1/8 teaspoon crushed red pepper
- 1 1/2 cups mild salsa
- 3 tablespoons tomato paste
- 1 (14-ounce) can fat-free, less-sodium beef broth
- 1/2 cup reduced-fat sour cream
- 1/4 cup chopped fresh cilantro
- 1 teaspoon fresh lime juice

- 1/2 cup soy sauce
- 1/2 cup orange juice
- 1/4 cup ketchup
- 1 tablespoon honey
- 2 tablespoons lime juice (from about 1 lime)
- 1 garlic clove, finely minced
- 1 teaspoon finely chopped fresh basil leaves
- 1 teaspoon finely chopped fresh oregano leaves
- Freshly ground black pepper
- 4 (7 to 8-ounce) mahi-mahi steaks, about 1-inch thick
- Canola or vegetable oil, for greasing the grill grates
- 2 cups cherry tomatoes, halved
- 2 scallions, white and light green parts only, thinly sliced
- 1 (14-ounce) can black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro leaves
- 1 jalapeno, finely chopped (seeded and ribbed for less heat)
