Scalloped Sweet Potatoes

Instructions Preheat oven to 325 degrees
- My combination - all finely chopped:
- 3 to 4 large yams or sweet potatoes
- 1 large onion, minced
- 4 cloves garlic, minced
- 2 cups shredded parmesan cheese
- 1 cup crumbled gorgonzola cheese
- 1 1/2 to 2 cups heavy cream
- fresh chopped herbs (thyme, sage, rosemary, parsley, oregano, etc.)*
- salt & pepper
- 2 Tbsp. rosemary, 1 tsp. thyme, 1 tsp. oregano, 1 tsp. sage
- NOTE: If you peel the sweet potatoes in advance, store them in water so they don't brown. Drain them well, pat them dry, and reduce the heavy cream to 1 cup.
Peppermint Sugar Cookies

For the cookies Preheat oven to 350 degrees and line baking sheets with parchment paper
- SUGAR COOKIES
- 3 cups unbleached, all-purpose flour
- 2 teaspoons baking powder
- 1 cup (2 sticks) salted butter, cold and cut into cubes
- 1 cup sugar
- 1 egg
- 3/4 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 1.5 inch round cutter
- ROYAL ICING
- 1/2 cup meringue powder
- 1 scant cup (almost full) water
- 2 pounds (32 ounces) powdered sugar
- 2 teaspoons light corn syrup
- 1 teaspoon peppermint extract (if desired)
- Super white gel icing color
- Pink, red or green icing color
- Small squeeze bottles
- Toothpicks
- 3 X4 Treat bags
- Twine or Twist ties
Royal Icing - Meringue Powder

- 4 cups (440 grams) confectioners' (powdered or icing) sugar, sifted
- 3 tablespoons (30 grams) meringue powder
- 1/2 teaspoon almond extract (optional)
- 1/2 cup - 3/4 cup (120 - 180 ml) warm water
- Food Coloring (I use Gel Pastes that can be found at cake decorating and party stores or else on-line)
Butter-Pecan Sweet Potatoes

to make ahead (up to five hours) prepare recipe through step 2/ cool, cover and refrigerate
- 8 med sweet potatoes (5 pounds)
- 2 tbsp oil
- coarse salt
- 2 tbsp butter, cut into small pieces
- 2 tbsp light brown sugar
- 1/3 c pecans
- 1/8 tsp cayenne pepper
Knock You Naked Brownies

Preheat oven to 350 degrees
- 1 box (18.5 Ounce) German Chocolate Cake Mix (I Used Duncan Hines)
- ◾1 cup Finely Chopped Pecans
- ◾1/3 cup Evaporated Milk
- ◾1/2 cup Evaporated Milk (additional)
- ◾1/2 cup Butter, Melted
- ◾60 whole Caramels, Unwrapped
- ◾1/3 cup Semi-Sweet Chocolate Chips
- ◾1/4 cup Powdered Sugar
Spinach Salad with Mandarin Oranges

- 1 12-ounce bag fresh spinach
- 1/2 cup oil
- 1/4 cup vinegar
- 1/4 cup lemon juice
- 2 tablespoons sugar
- 1 teaspoon oregano
- salt and pepper to taste
- 1 small can Mandarin oranges
- 1/2 cup of slivered almonds, toasted
Mini Chocolate-Meringue Cupcakes

For the cupcakes: arrange an oven rack in the center of the oven and preheat the oven to 350 degrees F
- 2 large egg yolks, at room temperature
- 1/4 cup vegetable oil
- 2/3 cup sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon (I use half this amount)
- 1/8 teaspoon fine sea salt
- 1/2 cup semisweet chocolate chips, melted
- 1/4 cup cake flour take our 1/2 tbsp add 1/2 tbsp cornstarch
- 3 large egg whites, at room temperature
- Topping
- 1 cup semisweet chocolate chips, melted
- 1 tablespoon vegetable oil
- Special equipment: a (24-count) mini-muffin pan, 18 to 20 (1.25-inch diameter) paper mini-muffin cup liners, recommended: Wilton
Game-Winning Guac' with Fresh Baked Tortilla Chips

To make the guacamole: In a medium bowl, coarsely mash the avocado
- 4 firm, ripe avocados, halved, pitted, and peeled
- 1/2 medium white onion, minced (about 4 tablespoons)
- 3 tablespoons chopped fresh cilantro leaves
- 1 medium lime, freshly squeezed (about 2 tablespoons)
- Kosher salt and freshly ground black pepper
- 12 fresh corn tortillas
- 1/2 cup vegetable oil
