1. Bring 4 quarts of water to boil
- 3 Large Eggs
- 2 ounces parmesan (about 1 cup)
- 2 tbsp heavy cream
- (or 2 eggs, 1 1/3 cup parmesan; 4 tbsp heavy cream)
- 1/2 pound thick cut bacon cut into 1/2" pieces
- 3 minced garlic cloves
- 1/2 cup dry white wine -- I used chardonnay
- 1 tbsp salt
- 1 pound spaghetti or angel hair

For the crust 1. Adjust oven to middle rack and heat oven to 350
- Chocolate Cookie Crumb Crust
- 16 oreo cookies broken into rough pieces (2.5 cups)
- 2 tbsp unsalted butter melted and cooled

- Pinch table salt
- 1/3 cup (2 1/3 ounces) sugar
- 2 tbsp cornstarch

Cajun Chicken with Pinto Beans

- 2 large skinless, boneless chicken breasts (about 12 ounces each)

Crockpot Ramen and Pork Soup

1. Microwave onions, garlic and oil in bowl, stirring occasionally until onions are softened, about 5 minutes
- 2 minced onions
- 6 minced garlic cloves
- 1 tbsp vegetable or peanut oil
- 9.5 cups chicken broth
- 12 ounces shiitake mushrooms stemmed and sliced thin
- 3 lbs boneless country style pork ribs, trimmed
- Salt and Pepper
- 4 packs ramen noodles, seasoning discarded
- 6 oz baby spinach
- 2 tbsp white miso
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp toasted sesame oil
- 2 scallions sliced thin
Tuna Fishcake Patties

1. Boil the potatoes. Drain and mash with the butter
- 1 1/2 lb potatoes
- 2 tbsp butter
- 2 hard boiled eggs chopped
- 3 spring onions chopped
- grated rind of 1/2 lemon
- 1 tsp lemon juice
- 2 tbsp chopped fresh parsley
- 7 oz can tuna in oil drained
- 2 tsp capers chopped
- 2 eggs lightly beaten
- 2 cups fresh white bread crumbs
- oil for shallow frying
- salt + pepper

1. Heat the oil to 350. Place paper towels on a baking sheet for draining
- 3 cups vegetable oil for frying (you can use a heck of a lot less like 1/2 to 3/4 cup)
- 3 15 oz cans chickpeas (or cup down by 1/3), rinsed and patted dry
- 1 tbsp powdered garlic
- 1 tbsp onion powder
- 1 cup all purpose flour

1. Adjust oven rack to middle position and heat to 300 degrees
- 1 boneless chuck-eye, seven-bone or top-blade roast, about 3.5 pounds (chuck eye is easiest to get)

- 1 small carrot, peeled and chopped medium
- 10 ounces white mushrooms cleaned and quartered

- 1/2 cup beef broth
- 1/2 cup dry red wine
- 1 14.5 oz can diced tomatoes
- 1 tsp thyme
- 1 to 1.5 cups water

- 1 cup yellow corn meal
- 1 cup white flour
- 4 tsp baking powder
- 1/4 c sugar
- 1 tsp salt
- 4 tbsp oil; 1 tbsp in batter, 3 tbsp in skillet
- 2 eggs
- 1 cup sweet milk (regular milk)
