French Apple Turnovers

1. Position a rack in the center of the oven and heat the oven to 425
- 1 tbsp unsalted butter
- 1 large sweet apple such as gala or honey crisp, peeled, cored and thinly sliced
- 1 tbsp plus 1 tsp granulated sugar
- 1/4 tsp cinnamon
- Kosher salt
- 1 large egg
- 1 sheet puffed pastry from a 17.3 oz box, thawed over night and cut into 4 equal rectangles
Baked Rice

1. Put oven rack at middle position and heat oven to 350 degrees
- 1 1/2 cups long grain white rice
- 2 tbsp unsalted butter
- 1 small onion, chopped fine
- 2 3/4 cups chicken broth
Frosted Meatloaf

- 1/4 cup ketchup
- 1 tablespoon packed light brown sugar
- 1 tablespoon cider vinegar
- 1/2 teaspoon hot sauce
- 8 tablespoons unsalted butter
- 1 onion, chopped fine
- 3 garlic cloves, minced
- 1 cup whole milk
- 1 pound ground pork
- 2/3 cups cornflake crumbs
- 2 large eggs plus 1 large yolk
- 1/3 cup minced fresh parsley
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- Salt and pepper
- 1/2 teaspoon dried thyme
- 1 pound 90 percent lean ground beef
- 2 pounds russet potatoes, peeled and cut into 1-inch pieces

- 3 * 3 cups water
- 3 * 3 cups granulated sugar
- 2 * 2 cups fresh lemon juice
- 2 * 2 cups fresh lime juice
Southwestern Layered Beef Casserole

1. Adjust oven rack to middle position and heat oven to 350 degrees
- 1 tablespoon vegetable oil
- 1 cup long-grain white rice
- 2 (10-ounce) can Ro-tel Diced Tomatoes & Green Chilies
- 1/2 cup chicken broth
- Salt and pepper
- 1.3 pound 85 percent lean ground beef
- 1 onion, chopped fine
- 1 green bell pepper, stemmed, seeded, and chopped fine
- 1 tablespoon chili powder
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cans (8-ounce) tomato sauce
- 1 (15-ounce) can pinto beans, rinsed
- 2 cups cheese, Monterey Jack cheese, shredded
- 1 cup frozen corn, thawed
- 3 scallions, sliced thin on bias

- 3 Cups Water, slightly warm
- 6.5 cups flour

- 2 16 oz cans black beans, drained
- 1 16 oz cans chili beans
- 2 lbs ground beef
- 1 16 oz can tomato sauce
- 1 28 oz can diced tomatoes
- 1 tsp salt
- 1 tsp garlic powder
- 2 onions diced
Natilla Pudding

1. Combine the condensed milk, water, evaporated milk and egg yolks in a sauce pan
- 1 14 ounce can sweetened condensed milk
- 14 ounces water (1 condensed milk can)
- 1 13 ounce can evaporated milk
- 3 egg yolks
- 3 rounded tablespoons cornstarch
- 3 tablespoons water
- 2 1/2 tsp vanilla extract
- 2 tbsp unsalted butter
- ground cinnamon (optional)
Mojito with Club Soda
