IRISH PIRATE COCKTAIL

Put milk, ice cream, mint extract and rum into a blender
- 1 cup whole milk
- 1 pint mint chocolate chip ice cream
- 1 teaspoon pure mint extract
- 3 tablespoons dark rum
LEMON ANGEL CAKES WITH LEMON CONFIT

To make the confit: Cut a slice off the top and bottom of each lemon to expose the flesh
- Confit:
- 2 large lemons
- 1 cup granulated sugar
- Cake:
- 1 1/8 cups sifted cake flour
- 1 1/2 cups granulated sugar
- 1 1/2 cups egg whites (from about 12 eggs), preferably at room temperature
- 1 1/4 teaspoons cream of tartar
- 1/2 teaspoon salt
- 1 lemon, zest finely grated
- 1 teaspoon pure vanilla extract
- Glaze:
- 1/4 cup freshly squeezed lemon juice
- 1 1/2 cups confectioners’ sugar
- Special tools: pastry bag with a large plain tip, 1 large or 2 small mini muffin tins, ungreased
RAISIN PUMPKIN CAKE

Combine cake mix, spice and pumpkin
- 1 pkg. yellow cake mix
- 2 tsp. pumpkin pie spice
- 1 C. canned pumpkin
- Eggs
- Water
- 1 C chopped raisins
- Orange Buttercream Frosting
ASIAN GRILLED CHICKEN BREASTS

Mix the oil, soy sauce, garlic, ginger, mustard, salt and pepper, and brush on the chicken breasts

Press cookie dough into a greased pizza pan
- 1 tube refrigerated sugar cookie dough
- 1 8oz. pkg. cream cheese
- 1/2 c. packed brown sugar
- 4 c. sliced peeled tart apples
- 1 tsp. ground cinnamon
- 1/2 cf. caramel ice cream topping
- 1/2 c. peanut butter
- 2 tbsp. milk
- 1 12 oz. can lemon-lime pop
- 1/3 c. chopped pecans
RHUBARB CAKE

Cream shortening and sugar, add egg and beat
- 1-1/2 c. brown sugar
- 2 c. flour
- 1 egg
- 1/2 c. shortening
- 1 c. milk plus 1 tsp. soda dissolved in milk

- 2 ounces unsweetened chocolate, chopped
- 4 ounces semisweet chocolate, chopped
- 1/2 cup (1 stick) unsalted butter
- 1 cup sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/4 cup natural cocoa powder, such as Hershey's or Scharffen Berger
- 1/2 teaspoon baking powder
- 3/4 teaspoon fine salt
- 18 large marshmallows (not minis)
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking sheet.

- 1 t instant coffee

- 1 t almond extract (I skipped this entirely)
