BLUEBERRY VINEGAR

Bring all of the ingredients to a boil in a saucepan
- 1 cup blueberries
- 1 cup red wine vinegar
- 1/4 cup olive oil
- 1 large sprig fresh thyme
- 1 bay leaf
PUMPKIN BARS

Preheat the oven to 350 degrees F
- Bars:
- 4 eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 15-ounce can pumpkin
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- Icing:
- 8-ounce package cream cheese, softened
- 1/2 cup butter or margarine, softened
- 2 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
STRAWBERRY CREAM COFFEE CREAMER

Combine all ingredients in zip-lock or vacuum seal bag (or jar!), whatever container you prefer
- 1 cup dry non-dairy creamer
- 1 cup Nestle Strawberry Milk Mix
- 1/2 teaspoon ground cinnamon
STRUDEL CREAMER

- 14 ounce can sweetened condensed milk
- 1 1/2 cups skim milk
- 1 Tbsp cinnamon
- 1 tsp vanilla extract
- 1 tsp almond extract.
LEMON-DILL CUCUMBER DIP

Line a strainer with cheesecloth and place it over a deep bowl
- 2 cups plain low-fat yogurt
- 1 tablespoon finely grated lemon zest
- 1 tablespoon chopped, fresh dill
- 1 large cucumber, peeled and seeded
APRICOT AND WALNUT VARENIKIS

Ukrainian Dessert Dumplings
- 1/4 cup water
- 1/4 cup plus 2 tablespoons sugar
- 2 tablespoons apricot brandy (optional)
- 6 oz dried apricots (1 cup; preferably California)
- 1/2 cup walnuts (2 ounces), finely chopped
- Pierogi and vareniki dough
- 1 stick (1/2 cup) unsalted butter
- 1/2 cup fresh bread crumbs
- 1/4 teaspoon cinnamon
CARROT CAKE WITH BABY FOOD

Preheat oven to 350 degrees F (175 degrees C)
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 3 teaspoons ground cinnamon
- 1 1/2 teaspoons salt
- 1 1/2 cups vegetable oil
- 2 cups white sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 1 cup chopped pecans
- 3 (4 ounce) jars carrot baby food
- 1/2 cup grated carrot
- 1 cup flaked coconut
WHITE HOT CHOCOLATE MIX

Put 1-1/2 c. dry milk and 1 c
- 3 c. instant nonfat dry milk
- 2 c. white chocolate chips
- 2 tsp. vanilla powder
RHUBARB FREEZER JAM

Stir rhubarb and sugar together and let stand overnight
- 4 c Sugar
- 1 pk Strawberry jello (6 oz)
- 5 c Rhubarb, cut fine
BANANA BRUSCHETTA

Toast bread and let cool
- 6 thick slices Hawaiian bread
- 1 medium banana, mashed (1/2 c)
- 1/4 c. cream cheese with pineapple
- 1-1/2 tsp. unsweetened cocoa powder
- 3 medium bananas, thinly slices
- 1 tbsp. butter, melted
- 2 tbsp. brown sugar
- Sifted powdered sugar (optional)
- Chocolate curls (optional)
