Ingredients

  • 1 medium onion (1/2 large) chopped
  • 1 red bell pepper, chopped
  • 16 ounces elbow macaroni (4 cups)
  • 4 cups milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon salt
  • 16 ounces shredded Cheddar, divided
  • 2 cups soft breadcrumbs (8 slices, crusts removed)
  • Cooking oil spray

Preparation

Step 1

Cook macaroni according to package directions; drain well. Set aside.

Sauté onion and bell pepper until soft.

Place milk, flour and salt in a quart jar; cover tightly and shake vigorously 1 minute.

Stir together flour mixture, 3½ cups cheese, sautéed vegetables and macaroni.

Pour macaroni mixture into a lightly greased 13 x 9 inch baking dish. Sprinkle evenly with breadcrumbs and remaining cup of cheese. Spray with olive oil spray.

Bake in 350F oven for 45 minutes or until golden brown.
