Golden Macaroni & Cheese

Ingredients
- 1 medium onion (1/2 large) chopped
- 1 red bell pepper, chopped
- 16 ounces elbow macaroni (4 cups)
- 4 cups milk
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 16 ounces shredded Cheddar, divided
- 2 cups soft breadcrumbs (8 slices, crusts removed)
- Cooking oil spray

Preparation
Step 1
Cook macaroni according to package directions; drain well. Set aside.
Sauté onion and bell pepper until soft.
Place milk, flour and salt in a quart jar; cover tightly and shake vigorously 1 minute.
Stir together flour mixture, 3½ cups cheese, sautéed vegetables and macaroni.
Pour macaroni mixture into a lightly greased 13 x 9 inch baking dish. Sprinkle evenly with breadcrumbs and remaining cup of cheese. Spray with olive oil spray.
Bake in 350F oven for 45 minutes or until golden brown.
