Ingredients

  • 1 lb. Sweet Italian Sausage Links, cut into 1/2 in. pcs.
  • 1 Yellow Sweet Pepper, cut into 1 in. squares
  • 1 Red Sweet Pepper, cut into 1 in. squares
  • 1 C. Chopped Onion
  • 2 Cloves Garlic, minced
  • 2 Tbsp. Olive Oil
  • 1/2 C. Dry Red Wine
  • 1 28 oz. Can Italian Plum Tomatoes in puree, undrained & crushed
  • 3 Tbsp. Tomato Paste
  • 1 tsp. Sugar

Step 1

In a 4 qt. Dutch oven, cook sausages over med heat till brown, stirring occasionally. Remove from pan; set aside. Discard drippings. In the same pan, cook peppers, onion, & garlic in hot oil approx. 5 min. or till tender, stirring occasionally. Carefully add wine, bring to boiling; reduce heat. Simmer, uncovered, approx. 5 min. or till wine nearly evaporates. Stir in tomatoes, tomato paste, sugar, & the cooked sausage. Bring to boiling; reduce heat. Simmer, uncovered, approx. 10 min. or till desired consistancy, stirring occasionally. Season with Salt & Pepper.
