Fish Bake

OMG. So easy and so yummy! The garlic mayo makes all of the difference, keeping the fish tender and flavorful and helping make a crispy crust. This will become your go-to fish prep method!

Ingredients
- recipe Roasted Garlic Mayo:
- 2 cups panko breadcrumbs
- 1 cup grated Parmigiano-Reggiano cheese
- Salt and pepper, to taste
- 2 to 2 1/2 pounds cod or other sustainable, firm, white, flakey fish filets, cut into 4- to 5-inch chunks
- l bulb roasted garlic
- 1 cup mayo

Preparation
Step 1
Preheat oven to 400F. Set oven rack in middle of the oven.
In a shallow mixing bowl, combine the breadcrumbs and parm, and season with salt and pepper.
Place the cod on a wire rack set on top of a baking sheet. Slather the top side with 1 recipe Roasted Garlic Mayo and top with breadcrumb mixture.
Bake 15-20 minutes, or until cooked through and breadcrumbs are brown and crispy
