Dr. Pepper Pork Roast (slow-cooker)

I have used this recipe many times it is a fool proof recipe for that hard to get right pork roast.
Ingredients
- 2 med onions, sliced
- 2 T. canola oil
- 1 4 lbs. pork loin roast
- salt and pepper
- 5 whole cloves
- 2 sticks cinnamon
- 1 whole bay leaf
- 1 can Dr. Pepper
- 1 1/2 cups dried apricot halves and plums (opional
- *Drier's* mustard

Preparation
Step 1
1 Place slice onions in a 31/2 to 4 qt. slow cooker. In a large skillet heat oil over med. high heat. Season pork roast with salt and pepper. Brown roast on all sides in skillet. Place browned roast in cooker on top of onions
2. Add cloves, cinnamon sticks and bay leaf to cokker fou Dr.Pepper over roast and top roast with dried fruit and mustard. Cover and cook on high-heat settign for 3-4 hours or low-heat setting for 8-9 hours or until internal temperature of roast is 160 degrees.
3. Remove roast from cooker and let rest for 10 min. Use a slotter spoon to remove onion, fruit and spices from cooker. Pour liquid in a sauce pan and make a gravy using cornstarch and water.
