Step 1
Whip eggs, ricotta, baking powderm sugar and vanilla together until the eggs are fluffy.
Pour half the batter into a 6" waffle maker and cook for 3-4 mins.
Top with sugar-free jam and low fat whipped topping, cheese and ham, or salsa and avocado.
