Zucchini Bread II

This is another Zucchini Bread recipe that I like. This one makes two loaves. You can also use this recipe for mini muffins, or regular size muffins. Bake the mini muffins for 10-12 minutes, check regular sized muffins at 16-20 minutes, until a toothpick comes out clean.

Ingredients

  • Makes two loaves
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 Tbsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 Tbsp cinnamon
  • 3 cups zucchini, grated

Preparation

Step 1

In a large bowl, beat together eggs, sugar, oil and vanilla. In a smaller bowl, combine remaining ingredients, except zucchini. Add flour mixture to egg mixture and blend until smooth. Add grated zucchini and mix by hand util zucchini is evenly distributed. Pour into 2 greased and floured loaf pans and bake at 350 degrees for 1 hour.
