Cinnamon Sweet Potato Mash

Ingredients
- 2 organic sweet potatoes, washed well and sliced thin
- 3 TB organic extra virgin coconut oil
- 1/2-1 tsp organic cinnamon, to taste
- Himalayan sea salt, to taste
- Hickory smoked bacon, optional garnish

Step 1
Fill a medium stockpot with water, raise to medium high heat and bring to a boil.
Add sweet potatoes and let boil until fork tender, 12-15 minutes {depending on thickness}.
Drain well and dump cooked potatoes in a Pyrex serving bowl.
Add coconut oil, cinnamon, and sea salt. Using an immersion blender, break up the sweet potato and whip to desired consistency.
Serve hot with optional garnish.
