Mom's Famous Amaretto Sweet Potatoes

Most people pass up the sweet potatoes at Thanksgiving or Christmas. They're usually loaded down with tons of sugar and marshmallows, resulting in a seriously over the top side dish. This recipe does have some sweetness from marshmallows that are cleverly melted down, but the sweet potato is still allowed to shine. This is a family favorite that everyone expects to see on my holiday table year after year.

Ingredients
- 1/4 c. butter or margarine
- 1/4 c. packed brown sugar
- 2 Tbsp. Amaretto liquor
- 1/4 tsp. salt
- 3 cans sweet potatoes or 2-3 fresh sweet potatoes (peeled, cut into chunks and boiled until just soft)
- 9 large marshmallows

Step 1
In large skillet, melt butter. Add sugar, Amaretto, and salt. Stir until dissolved. Add potatoes and then marshmallows. Fold potatoes and marshmallows together over low heat until marshmallows are fully melted and potatoes are glazed.
