Pasta Bean Soup

Ingredients
- 2 onions, finely chopped
- 3 celery stalks, finely chopped
- 2 Tbsp. olive oil
- 1 1.89 litre bottle vegetable cocktail
- 3 cups water
- 1 19 oz. can white kidney beans, drained
- 2 cups whole wheat rotini pasta
- 1 bag spinach
- salt and pepper

Step 1
In a large soup pot, sauté onion and celery in olive oil.
Add the vegetable cocktail and water. Bring to a boil. Stir in the beans and pasta. Cook 10 minutes until the pasta is tender.
Add the spinach, salt and pepper.
Stir and serve.
