  • 2 Tbs Butter
  • 1 ea shallots
  • 1 c sake
  • 2 Tbs lemon juice
  • 2 Tbs Szechuan peppercorns
  • 1 tps ginger crushed
  • 1 c fish stock
  • 1/2 c cream

Preparation

Step 1

Sauté shallots in butter
Add sake, lemon juice, Szechuan peppercorns, ginger and fish stock
Reduce by half
Add cream
Reduce to the appropriate thickness
Strain
