Ingredients
- Vinegar Sauce:
- 1 cup cider vinegar
- 1 small onion, sliced
- 1-2 jalapeno peppers, thin sliced
- 1 tablespoon coarse salt
- 1/2 cup water
- 1 tablespoon brown sugar {.5oz}
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 2 cups cider vinegar
- 3 tablespoons ketchup {1.5oz}
- 2 tablespoons brown sugar {1oz}
- 4 teaspoons coarse salt
- 1 tablespoon Tabasco or other hot sauce
- 1-2 teaspoons red pepper flakes
- 1-2 teaspoons black pepper

Step 1
MOP SAUCE:
Combine all ingredients in a nonreactive bowl and stir until salt and brown sugar are dissolved. Baste pork after 1 hour and repeat every 1 hour. Pour remaining sauce over pork in pan or serve on the side.
VINEGAR SAUCE:
Combine all ingredients in a nonreactive bowl and stir until brown sugar is dissolved.
Transfer to sterile jars and store in refrigerator, it will keep for several months. Serve on the side of pulled pork.
