Ingredients

  • 3 Eggs - well beaten
  • 2 C White Sugar
  • 1 C Vegetable Oil
  • 2 tsp Vanilla Extract
  • 2 C Zucchini - grated
  • 3 C Flour
  • 2 tsp Cinnamon
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder

Preparation

Step 1

Add all the dry ingredients together. Set aside.
Mix eggs, sugar, oil, vanilla & zucchini well and add to the dry ingredients. Pour mixture into well greased loaf pan. Bake 1 hour at 350`
Freezes well. Can substitute 1/2 Oil & 1/2 C Applesauce to reduce fat.
