Ingredients

  • 1 1/2 cup of Corn Meal
  • 1 Can Whole Kernel Corn.
  • 2 Eggs
  • 1 Cup of buttermilk
  • 1/2 lb of cheese; grated
  • 4 or 5 Jalapeno peppers; chopped (without seeds)
  • 1/2 cup of chopped onions
  • 1/2 Tsp salt
  • 1/2 Tsp Baking soda
  • 1 Tbsp Sugar

Preparation

Step 1

Mix dry ingredients with corn meal.
Add corn, eggs, buttermilk, onions and mix thoroughly.

Preheat oven to 350 degrees

Pour enough bacon drippings to cover bottom of large iron skillet and preheat.
Pour ½ of mixture into hot skillet.
Cover with grated cheese and chopped peppers.
Pour remaining ½ mixture over the cheese and peppers

Bake at 350 degrees for 45 minutes (or until brown).
