Roasted Sweet Potatoes with Garlic and Thyme
Healthy recipe from Rita Heikenfeld. Tried this a long time ago. Similar recipe to the recipe from GE that is titled Roasted Sweet Potatoes with Thyme that I just made (10/2018). This one might be a tad bit easier. I like that she suggests NOT peeling the sweet potatoes. That is a definite time saver! She also adds the garlic in vs. infusing the oil and uses more thyme. Roasting time is also a bit longer at a lower temperature.
Ingredients
- 4 medium sweet potatoes, peeled and cut into 1 1/2-inch rounds (I wouldn't peel them!)
- 3 tablespoons extra virgin olive oil (I would use coconut oil or butter)
- 1 tablespoon fresh thyme leaves or 1 teaspoon dry
- 2 garlic cloves, minced
- 1/4 to 1/2 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt

Step 1
Preheat oven to 375 to 400°F.
Toss potatoes with oil, garlic, and spices.
Make a single layer on baking sheet. Roast until tender and starting to brown, 40 to 45 minutes.
