Baked Potato Soup

Comforting, hearty soup with all the fixins of a loaded baked potato: bacon, green onions, sour cream, and Cheddar cheese. Fix it for dinner tonight!

Ingredients
- 6 slices bacon
- 1/4 cup margarine
- 2/3 cup all purpose flour
- 6 cups 2% milk
- 6 large baked potatoes, peeled and coarsely mashed
- 4 green onions, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup sour cream (divided)
- 1 1/4 cup Cheddar cheese, shredded

Preparation
Step 1
Cook bacon until browned. Drain, crumble and set aside.
In a stockpot or Dutch oven, melt the margarine over med heat.
Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
Reduce heat, and simmer 10 minutes. Add 3/4 cup sour cream. Mix well.
Top with bacon crumbles, cheese and remaining 1/4 cup sour cream.
