Stuffed Cornish Hens

Count on 1/2 hen per person, or buy small ones if you want to do singles.

Ingredients
- 4 small or 2 medium Cornish hens
- 1 cup rice, cooked
- 1 1/2 cup chopped onion
- 1/2 cup mushrooms
- 6 Tbsp. butter
- S&P
- 1/2 tsp. marjoram
- 1/2 tsp. thyme
- 1 cup slivered almonds
- 12 strips bacon

Step 1
Preheat oven to 350*.
Saute onions and mushrooms. In a bowl, mix butter, S&P, marjoram, thyme and nuts. Add sauteed onions and mushrooms and cooked rice. Mix well and stuff the hens.
Wrap three strips of bacon around hens and cook in covered roaster for 1 1/2 hours, uncovering the roaster for the last half hour.
