Ingredients

  • 2 lb. Yukon gold potatoes, peeled and cubed
  • 2 cups shredded Gouda
  • 1 ⁄2 cup buttermilk, warmed
  • 1 ⁄2 cup plain Greek-style yogurt
  • 1 Tbsp. chopped fresh chives
  • Salt and black pepper to taste

Preparation

Step 1

Boil potatoes in a large pot of salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.

Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
