Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 1 trout fillet
  • 1 tablespoon cornmeal
  • Salt and pepper to taste
  • 1/2 teaspoon chopped fresh parsley add to shopping list
  • 1 cup french green beans, trimmed and cut into bite-size pieces
  • 2 teaspoons sliced almonds

Step 1

1. Heat 1 tablespoon oil in a nonstick skillet over medium heat.
2. While pan is heating, sprinkle flesh side of trout with cornmeal, salt, and pepper, pressing lightly so the cornmeal sticks.
3. Place in pan, flesh side down, and saute for 4 minutes. Flip and cook for another 2 minutes. Top with parsley. 4. Place beans into a steamer basket and steam for 5 minutes. Toss with remaining 1 teaspoon oil, almonds, salt, and pepper
