This is a very tasty stew and you can use just about any kind of seafood in it.

Ingredients

  • 6 Tbsp olive oil
  • 1 cup onion, chopped
  • 2 large garlic cloves, chopped
  • 2/3 cup fresh parsley
  • 1 cup fresh tomato, chopped
  • 2 tsp tomato paste
  • 8 oz clam juice
  • 1/2 cup dry white wine (sauvignon blanc)
  • 1 1/2 pound fish fillet, cut into 2 inch pieces (cod, sole, sea bass, snapper, halibut, etc)
  • touch of dry oregano, tabasco, thyme, salt and pepper

Preparation

Step 1

1. Heat oil in a heavy large pot or dutch oven, over medium-hi heat. Add chopped onion and garlic, sautee 4 minutes. Add parsley and stir 2 minutes. Add tomato and tomato paste, and gently cook for 10 minutes.

2. Add clam juice, wine and fish and simmer until fish is cooked through, less than 10 minutes.

3. Add seasonings and salt to taste.
