Ingredients
- Frosting:
- 1 c sugar
- 1 c brown sugar
- 4 eggs
- 1 c oil
- 1 t salt, soda, and cinnamon
- 1 t baking powder
- 3 c grated carrots
- 2 c flour
- 1 c chopped walnuts (optional)
- 4 oz package softened cream cheese
- 1/2 sq butter
- 1 t vanilla
- powdered sugar-add enough to desired spreading consistency

Step 1
Beat the first six ingredients together. Then add carrots, continue mixing and add flour and walnuts. Pour into a 9x13 pan and bake at 350 for 35-40 minutes. Chill. Frost and sprinkle with chopped nuts and coconut.
