Ingredients

  • Frosting:
  • 1 c sugar
  • 1 c brown sugar
  • 4 eggs
  • 1 c oil
  • 1 t salt, soda, and cinnamon
  • 1 t baking powder
  • 3 c grated carrots
  • 2 c flour
  • 1 c chopped walnuts (optional)
  • 4 oz package softened cream cheese
  • 1/2 sq butter
  • 1 t vanilla
  • powdered sugar-add enough to desired spreading consistency

Step 1

Beat the first six ingredients together. Then add carrots, continue mixing and add flour and walnuts. Pour into a 9x13 pan and bake at 350 for 35-40 minutes. Chill. Frost and sprinkle with chopped nuts and coconut.
