Carrot Cake

Ingredients
- 4 eggs
- 1 1/2 cup sugar
- 1 1/2 cup oil
- 2 cups flour
- 1 tsp salt
- 3 tsp baking soda
- 2 tsp cinnamon
- 3 cups carrots grated approx 1 lb
- 2 tsp vanilla
Details
Preparation
Step 1
Beat eggs gradually adding sugar
Add oil then beat
Mix dry ingredients then add to the egg mixture. Blend well
Add carrots & vanilla mix
(Optional: Small can chopped pineapple-drained)
Pour into greased & floured 8 ½ x 11 pan
Bake 350 F approx 50 min
Icing: ( increase by 1 ½ for layered cake )
11oz cream cheese at room temp
1 stick butter at room temp
Approx 1 ½ cups powdered sugar
Beat together cheese & butter , then add sugar and beat………..
