Ingredients

  • 2 tblsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 1/2 lbs sirloin tips, cubed
  • 1/2 tsp ground cumin
  • 1 tsp oregano
  • 8 oz can tomato sauce
  • 2 tblsp red wine vinegar
  • 1/2 cup pimiento stuffed green olives
  • 1/4 cup raisins(optional)
  • 4 potatoes, peeled and quartered
  • salt and pepper taste

Preparation

Step 1

In a large pan, heat oil and cook onion and garlic, stirring frequently until transparent. Stir in cubed meat and cook until browned. Stir in red pepper, cumin and oregano;cook for 2-3 min. Stir in tomato sauce, vinegar and olives. Pour in enough water to just cover meat. Bring to a boil, reduce heat to low and cover. Simmer until fork tender, about 1 1/2 hours. Add more water if it becomes too thick. Stir potatoes into the stew, salt and pepper to taste and cook covered until potatoes are tender. Uncover the last 10 minutes of cooking.
