Ingredients

  • Dressing:
  • 5 ears of fresh corn – quick boil and sliced from the cob
  • 1 vine ripe tomato - diced
  • 1/4 red onion - chopped
  • 1 clove of garlic – chopped
  • 1 stalk of celery – chopped
  • 1/2 cup of fresh basil – chopped
  • 1 sweet pickle – chopped
  • 1/2 jalapeño – chopped with seeds
  • 1/2 bell pepper – chopped
  • 1/4 cup vinegar
  • 1 tsp. sugar
  • 1/2 tsp. salt

Step 1

Combine all of the above ingredients in a bowl.

Combine the ingredients for the dressing and add to the salsa.
