Easy Crockpot Potato Soup

This is one of the easiest comfort foods to make on a cold winter day. Nothing better than a big bowl of potato soup topped with bacon, sour cream and cheese!

Ingredients

  • GARNISH:
  • 1 (30-ounce) bag frozen hash brown potatoes
  • 2 (14-ounce) cans chicken broth
  • 1 (10.75 ounce) can cream of chicken soup
  • 1/2 cup chopped onion
  • 1/3 teaspoon ground black pepper
  • 1 1/2 cups greek yogurt
  • Green onion, minced

Preparation

Step 1

In a slow cooker, combine potatoes, broth, soup, onion, and pepper. Cover, and cook on low for 5 hours.

Stir in greek yogurt after 30 minutes, stirring occasionally, until combined.

Garnish with green onion.

NOTE: I topped with shredded cheese and bacon bits, because I had them on hand. Otherwise, I followed the recipe exactly.

You could even have a "toppings bar" at your party, letting your guests choose from all sorts of toppings for their soup...shredded cheese, chives, bacon bits, sour cream, etc. Then serve with crackers or bread.
