Secret Squash Cupckaes

Ingredients
- 3 c squash puree (take 3 medium yellow squash - not peeled) steam until tender then use a blender to make puree
- 3 c sugar
- 3 c flour
- 1 1/2 t cinnamon
- 1 1/2 t baking powder
- 1 t baking soda
- 1/2 t salt
- 4 eggs
- 1 1/2 c vegetable oil
- 1 t vanilla extract
- 1 c chopped pecans (or even better...craisins!!!)
- Vanilla buttercream frosting
- 1 cup butter at room temp
- 4 cups powdered sugar
- 1/4 c milk
- 1 1/2 tsp vanilla extract
- combine, cream together
- Cream cheese frosting
- 1 cup butter at room temp
- 4 cups powdered sugar
- 1 8 oz pkg softened cream cheese
- combine, cream together

Step 1
Combine all dry ingredients in a large bowl and set aside. Combine all wet ingredients. Slowly add dry ingredients. Spoon into paperlined cupcake pan. Bake 350' for 18-22 minutes until toothpick comes out clean.
