Ingredients

  • 3 c squash puree (take 3 medium yellow squash - not peeled) steam until tender then use a blender to make puree
  • 3 c sugar
  • 3 c flour
  • 1 1/2 t cinnamon
  • 1 1/2 t baking powder
  • 1 t baking soda
  • 1/2 t salt
  • 4 eggs
  • 1 1/2 c vegetable oil
  • 1 t vanilla extract
  • 1 c chopped pecans (or even better...craisins!!!)
  • Vanilla buttercream frosting
  • 1 cup butter at room temp
  • 4 cups powdered sugar
  • 1/4 c milk
  • 1 1/2 tsp vanilla extract
  • combine, cream together
  • Cream cheese frosting
  • 1 cup butter at room temp
  • 4 cups powdered sugar
  • 1 8 oz pkg softened cream cheese
  • combine, cream together

Step 1

Combine all dry ingredients in a large bowl and set aside. Combine all wet ingredients. Slowly add dry ingredients. Spoon into paperlined cupcake pan. Bake 350' for 18-22 minutes until toothpick comes out clean.
