Parmesan Crusted Chicken with Bacon Cream Sauce

Ingredients

  • For Chicken:
  • 1 lb chicken breast (about 3 large)
  • 1 tbsp avocado oil mayo
  • 3 tbsp shredded parmesan cheese
  • For Sauce:
  • 3 slices bacon, fried and crumbled (fat reserved in pan)
  • 1/2 cup heavy whipping cream
  • 1 tbsp cream cheese
  • 1 tbsp shredded Parmesan cheese
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees. Rinse and dry the chicken. Make sure all the water is off the chicken so the mayo sticks.

Using a silicone baking brush, brush the may on top of the chicken evenly.

Top with shredded cheese and place in baking dish. Bake uncovered 40-50 minutes, or until chicken is done, making sure internal temperature reaches at least 160.

When the chicken has about 10 minutes left, begin the sauce.

Using a skillet, warm the reserved bacon fat over medium-low heat. Whisk in the heavy cream until well combined. Continue to mix until the mixture starts to foam on the edges of the skillet.

Add the cream cheese and whisk until smooth. Add parmesan and garlic powder, still whisking until smooth. Toss in some of the crumbled bacon, leaving some for a garnish.

Place 1 chicken breast on a plate, and top with 2-3 tbsp of the sauce. Top with bacon crumbles.
