Couscous with Peas

Ingredients

  • 2 cups couscous
  • 1/2 finely chopped onions
  • 2 minced cloves garlic
  • 1 1/2 cup frozen peas
  • 4 c. chicken broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Preparation

Step 1

Sauté the onions in olive oil for 3 minutes. Add the garlic and sauté for 1 minute. Add chicken broth and peas. Bring to a boil. Add couscous and salt and pepper. Cover and remove from heat. Allow couscous to sit for 5- 10 minutes or until all broth is absorbed. Fluff with fork and serve.
