Garlic Toast Personal Pizzas

Quick and easy recipe that kids of all ages will love! Frozen garlic Texas toast is topped with pizza sauce, mozzarella, and pepperoni then baked.
Ingredients
- 1 (11.25 oz) box frozen garlic Texas toast (I used New York brand, 8 slices)
- 1/2 cup pizza sauce (I used Ragu)
- 1 (3 1/2 oz) package sliced pepperoni (I used Hormel, Original)
- 2 cups (8 ozs) shredded part-skim mozzarella cheese
- Grated Parmesan cheese, optional but recommended*

Preparation
Step 1
Preheat oven to 425° F.
Line a 15x10" jellyroll baking pan with parchment paper. Place Texas toast in the pan and bake 5 minutes. (After checking it at 5 minutes, I baked it another couple minutes to ensure the bread wouldn't be soggy).
Remove from oven and spread toast with pizza sauce (*Before adding the sauce, I sprinkled a little Parmesan and mozzarella on the toast to keep the sauce from soaking up in the bread); then top generously cheese, then pepperoni.
Place oven rack at top position and broil pizzas on low until pepperoni starts to curl and cheese is melted. Serve immediately with a sprinkle of Parmesan cheese and crushed red peppers, if desired.
