Black Bean Soup

Ingredients

  • 2 tsp. olive oil
  • 2 onions, chopped
  • 2 jalapeno peppers seeded and chopped
  • 1 garlic clove minced
  • 1 15 oz can black beans, rinsed and drained
  • 2 cups chicken broth
  • 1 cup water
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp dry sherry
  • 1 tsp lime juice 1/2 tsp salt
  • 2 tbsp chopped cilantro or 1 tbsp dry
  • 1 small onion or 2 scallions minced

Preparation

Step 1

In a medium nonstick saucepan, heat the oil and saute the chopped onions, jalapenos and garlic until softened, about 5 minutes
Stir in the beans, broth, cumin, coriander, and 1 cup water, bring to a boil, reduce heat cover and simmer until the flavors blend (about 45 minutes) remove from heat.
Stir in sherry and lime juice and salt, cool slightly
Transfer soup into blender and puree
Return to saucepan and heat to serving temperature.
Add more whole black beans if desired.
Garnish with minced onion and cilantro.
