Ingredients

  • 4-6 Large Potatoes (Russet or Yukon Gold are best)
  • 1 Cup Chicken Stock
  • 1/3 Cup of Extra Virgin Olive Oil
  • Juice of One Whole Lemon
  • 1 Clove of Garlic, Crushed or Finely Chopped
  • 1 Tablespoon Paprika
  • 1 Tablespoon Oregano
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Thyme
  • Salt to Taste

Step 1

Preheat oven to 325F
Peel Potatoes and cut into 1 inch thick slices. Quarter the large slices and halve the small slices, until all pieces are approximately the same size.
Combine all other ingredients in a large mixing bowl and whisk briskly. Add the potatoes to the mixture, cover and refrigerate for 30-45 minutes.
Pour into a large casserole dish, arranging potatoes in a single layer. Cover tightly with foil.
Bake covered at 325F for 45 minutes to 1 hour or until potatoes are fork-tender. Remove foil and broil for 5-7 minutes or until golden.
Remove from oven and allow to cool for 5 minutes before serving.
