Ingredients

  • Frosting:
  • 1 cup sugar
  • 1 cup oil
  • 3 eggs
  • 1/2 tsp. salt
  • 1-1/3 tsp. baking soda
  • 1-1/3 tsp. baking powder
  • 1-1/3 tsp. cinnamon
  • 1-1/3 cups flour
  • 2 cups grated carrot
  • 4 oz. cream cheese, softened
  • 2 tbsp. butter or margarine
  • 2-1/2 cups icing sugar
  • 1 tsp. vanilla

Preparation

Step 1

1. Mix sugar and oil with beaters. Add eggs. Beat in the salt, baking soda, baking powder, cinnamon, and flour one at a time; until well blended. Fold in carrots. Bake in 2 - 8"x8" square pans (wax paper lined and greased).

2. Bake in 300F oven for 60 minutes.

3. Mix all frosing ingredients together until smooth and spreadable. Spread on cooled carrot cakes and layer if desired.
