Ingredients
- 4 large baking potatoes
- 4 tsp. butter softened
- 1 +1/3 cups grated cheese (cheddar, swiss, monterey jack, or mix them)
- 2-3 cloves minced garlic
- 1/2 tsp. each salt + white pepper
- 1/4 cup grated parmesan cheese

Step 1
Scrub potatoes, dry well, and pierce several times with a fork. Place on baking rack and bake at 425F until tender, about 50 minutes. Let cool.
Cut off top 1/3 of each potatoe. Scoop out potato from bottom sections, leaving 1/4-inch thick shell. Place scooped-out potato in large bowl, reserving the shells. Add potato from tops and discard remaining skin. Mash potato with masher until smooth. Add remaining ingredients and mash to blend well. Spoon potato mixture into reserved shells, mounding evenly, top with grated parmesan. Place filled shells on a baking dish and bake until browned on top and heated through, about 20-25 minutes
